Maamul Cookie Recipe
Preheat oven to 350°F. Lightly grease a baking sheet with cooking spray.
Cream together butter, sugar, vanilla extract, sour cream and egg and mix well.
Add self-rising flour to wet ingredients and mix until dough comes together.
Once the dough is ready, divide it into 4 chunks.
Move the first chunk onto a large cutting board that is lightly dusted with flour.
Shape the dough into a rectangle log.
Use a spatula to evenly spread the ground dates / date spread on the dough, leaving about 1/2-inch uncovered on all sides.
Roll up jelly roll style starting at the long side closest to you.
Roll gently and evenly until to the opposite edge. Lightly press in on the seam.
Carefully transfer the log to a large baking sheet Place the seam side down.
Do the same with the other 3 chunks of dough.
Put all 4 rolls in the freezer for 20 min.
Make cuts to mark the cookies before baking: Cut 1 or 2-inch with a sharp knife – cut only halfway through the roll not all the way (see pic).
Bake in preheated oven for about 30 minutes until golden brown. Cool before cutting all the way into 1 or 2-inch slices.
When completely cool dust with confectioners’ sugar or glazing sugar.

3 ½ cups of self-rising flour
1 teaspoon vanilla extract
¼ cup sugar
8OZ. unsalted butter –melted
1 cup sour cream
Confectioners’ sugar or glazing sugar, for dusting
450g pitted ground dates / a jar of date spread
*If you are preparing the date filling yourself, you can add warm water
While grounding the dates. Add very little each time until the texture is pasty.
